Her shrill voice bellowed into the microphone as the compere introduced her to an ecastic audience. The voice was familiar. A former presenter on Wazobia FM, Lagos, Matse Uwatse, developed a cult of followers for her afternoon belt programme at the time on air.
Her sudden departure led her to find a new love and passion for cooking and food photography.
She interacted freely with the audience switching between pidgin and English language effortlessly. The audience participation in the cooking of her Dodo Frejita made her session engaging and interactive. Unfortunately, time was no longer on her side, she couldn’t plate the food.
Before she started the cookery class, she gave tips on how to blend seasoning especially curry that is commonly used in many homes. Below is her recipe on how to blend spices to make curry:
Ingredient
5 tablespoons of ground Coriander
2 tablespoons of cumin
2 tablespoons of powdered turmeric
2 teaspoons of ginger
2 teaspoons mustard seeds
2 teaspoons black pepper
1 teaspoon of cinnamon
Half teaspoon of green cardamom
1 teaspoon of chili
Method
Add all in blender and blend together until smooth
According to her, the ingredients can be toasted on a frypan placed on fire for some minutes before blending. This will make the aroma of the spices blend together thoroughly.
“Experience your spices in your own laboratory and create your own blend. Keep it as your trade secret,” she told the audience.
